The Tennesse Tamale Guy is Back! Immerse yourself in the traditions of tamale-making with Herman Garcia. This class teaches you everything about tamales; we will create Chicken Chili Verde tamales from scratch. We’ll make tacos, salsa, and guacamole, too! Topics and Techniques: Masa – work with masa harina; fillings – braise and apply moist heat cooking methods to proteins and vegetables; wrapping Tamales – work with corn husks to fill and wrap tamales.
