Jordan Bailey recently returned from Finland, where she fell in love with the country’s food culture, hospitality, and the simple magic of gathering around good food. Now she’s bringing a little piece of Finland home to the Appalachian Mountains.
Join Jordan for a hands-on class to learn to make traditional Finnish riisipiirakka, rustic pastries made with a thin rye dough and a creamy rice porridge filling. Together, we’ll make the rye dough, prepare the rice porridge, and learn how to shape and crimp each pastry by hand before baking them until crisp around the edges and tender in the center.
Once they’re out of the oven, we’ll explore ways to enjoy riisipiirakka with both savory and sweet toppings while learning a little about the Finnish food culture that inspired the class.
Come ready to get your hands in some rye flour, try something new, and experience a little of the magic Jordan discovered in Finland, right here in the Appalachian Mountains.
About Jordan
Jordan Bailey is a creative, photographer, baker, and lifelong lover of bringing people together around a table. She founded and operated Weirdough, a boutique baking brand specializing in handcrafted desserts, and has created dinner parties and culinary experiences centered around curiosity, creativity, and connection.
Jordan has taught cooking classes at Serenity Knoll in years past and is excited to return with fresh inspiration from her recent travels through Finland. Her approach to food is rooted in curiosity and the belief that what we eat can tell us something about a place, its people, and the ways we connect with one another.
